Kyoshi Bill's HEALTHY Recipe of the Month!! Baja Fish Tacos!!

(2 Tacos Per Serve, feeds approx 4 people - around 300 calories per serve)

Prep Time: 5 mins, cook time 7 mins

Ingredients needed: Cooking spray, 350g mahi mahi or firm boneless white fish, 1 tablespoon of fresh lime juice, 1/2 avocado diced, handful of fresh coriander chopped, 2 teaspoons of fajita seasoning, 2 cups sliced purple cabbage, 8 small tortillas, 1 can of black beans, 4 teaspoons chipotle hot sauce, lime wedges, 4 teaspoons reduced fat sour cream.

Method:

1. Lightly spray BBQ/Pan and preheat until hot
2. Season both sides of fish with fajita seasoning, press into the flesh, cook on both sides for 3-4mins
3. in a bowl, combine coriander, lime juice and cabbage
4. Microwave tortillas until warm
5. Spread each tortilla with 1 teaspoon of sour cream, top with fish, then ad coriander/cabbage mix, top with avocado and chipotle hot sauce. Serve with lime wedges
