KYOSHI BILL'S HEALTHY RECIPE OF THE WEEK!!!

South American Style Breakfast Omelette

Serves 3

INGREDIENTS

1 TABLESPOON OLIVE OIL

1 POTATO, SCRUB WELL AND SLICE THINLY

8 LARGE FREE RANGE EGGS

1 1/2 CUPS OF CHERRY TOMATOS CHOPPED

1/2 CUP MOZARELLA CHEESE, GRATED

3 TABLESPOONS OF CORIANDER, CHOPPED

FRESH JUICE OF ONE LIME

SALT AND PEPPER TO TASTE

2 SHALLOTS, THINLY SLICED

METHOD


Heat 1 tablespoon of oil in pan over medium heat. Add potato, cover, and cook, stirring occasionally, until brown and tender.

Stir in garlic and all shallots, cook for 1-2 mins

Beat eggs until well combined. Add 1/4 cup of tomato and the cheese; stir to combine, pour egg mixture over the potatoes cook eggs on the stovetop, lifting the edges to allow uncooked egg to flow underneath, until the center is set

In a small bowl, combine the remaining tomatoes, coriander, and lime juice. Run a metal spatula around the edges of the pan and slide the omelette onto a platter. Serve cut into wedges and pour over tomato coriander and lime juice mix.
